  • Micro Green Salad with Lemon Goji


    • 1 ripe avocado, diced with pit removed
    • ¼ cup crushed unsalted pistachios
    • ¼ cup slivered apple
    • 1 lemon; juice plus 1 tsp zest
    • ¼ cup dried Goji berries*
    • 1 tbsp Dijon mustard
    • 1 tbsp agave nectar
    • 1 small garlic clove, chopped
    • ¼ cup olive oil
    • pinch of salt
    • 1 tsp black pepper

    Combine lemon juice, goji berries, Dijon, agave nectar and garlic in a food processor or blender. Start on low speed and stream in olive oil. Blend until perfectly smooth. Add up to a ¼ cup of water to thin, and mix well. Season with salt and pepper.

    Arrange the greens delicately on a plate. Decorate with the crushed pistachios, avocado and apple. Drizzle dressing over the top and enjoy and beautiful, healthy appetizer.
